Serves 2 or 3
Ingredients:
6 ripe strawberries, sliced
1 cup unsweetened almond milk
1/4 cup chia seeds
1/8 cup pure maple syrup (you could also use agave or coconut nectar but adjust the sweetness to taste)
1 tsp organic vanilla extract (make sure its the real stuff not imitation), you could also use 1 vanilla pod, scraped
dash of cinnamon
Combine in a bowl, cover and leave in fridge overnight to soak. Stir well in morning and serve with a few extra strawberries on top.
